Feeding starter

1/2 cup flour + 1/2 cup water.
If left out it will be happy in 12 hours.
In the fridge for about a week.

Sourdough Bread

  • 3 cups flour
  • 1 cup starter
  • 1 cup water
  • 2 teaspoons salt (mix into water)

Mix in bowl.
Let rise at least 12 hours.
Scrape dough from bowl on to floured surface.
Butter a pot.
Fold the dough a few times.
Put in pot.
Let rise at least 4 hours.
Put in [cold or hot] oven.
400 degrees for about an hour.

Remember: need 2 cups of room temperature starter (more than I usually have handy – and warm!)
